If you are trying to subscribe to M365 insider preview and subscribe button is not available inside the excel or word add following registry key, this fixed it to me and I have been subscribed to the beta channel M365 Insider preview. 

reg add HKLM\Software\Policies\Microsoft\office\16.0\common\officeupdate /v updatebranch /t REG_SZ /d BetaChannel
